Sailing an Oyster has always sparked my wanderlust, but it usually has gone into remission a day or two later. After sailing the new 625 off Miami, I fear that my wanderer’s disease has gone terminal. Even though we were in the warmth of Florida’s sun, visions of destinations among the high latitudes continuously looped through my brain as I steered her on a close reach in a moderate breeze. She loped along, flirting with her theoretical hull speed of 10 knots while we played with the mainsail and 150 genoa to hold our speed, in spite of the minute variations in the wind’s direction and strength. She responded quickly and accurately to changes in sail trim and input at the wheel. The rudder spoke to my hands via the wheel — a pleasant conversation that made me feel part of the boat.

Throughout most of Oyster Marine’s lifetime, it has stressed robust construction, high-quality equipment and joinery, and thoughtfully designed accommodations for its cruising yachts. Oyster was among the first to raise the amidships salon a couple of steps higher than the forward accommodations and enclose the area within a handsome deckhouse. The company’s brochures referred to this design as a “deck saloon,” the first of which, the 46 designed by Holman & Pye, splashed in 1980. Hull No. 9 of the 46, Leisurely Leo, was the first of many models to circumnavigate the globe. Other sailors on adventurous passages aboard their Oysters built the marque’s cachet as news of their exploits circulated among the cruising community. Although the early Oysters weren’t the fastest boats of the day, their relatively heavy displacement, fine entry and U-shape forefoot allowed them comfortably to maintain maximum speed over a wide range of conditions.

The 625 replaces the popular 62, which Oyster developed from the 61 and built for about 10 years, and, like all the latest models up to 99 feet, came from the drawing board of Rob Humphreys. He established a reputation early in his career for designing fast racing boats, and he’s applied this talent to Oyster’s line. Beneath the waterline, the 625 still has a fine entry and U-shape sections forward, but her entire underbody is shallower than that of her predecessors. Even more important to speed and handling, though, is the substantial reduction in displacement.

Although these changes to the shape of the underbody and the lighter displacement give the 625 a livelier personality than her ancestors’, I was disappointed to see the mainsail unrolling from the mast. In the past, this type of mainsail didn’t have a great shape (often characterized by a hollow leech) and what shape it did have deteriorated with each roller-furled reef. In-mast furling still compromises the shape, but vertical battens and modern design and materials have reduced the disadvantages. I prefer the mainsail to have a substantial roach and full-length horizontal battens, but Oyster claims that most of its customers for the 625 have ordered in-mast furling, no doubt because it eases getting under way and reefing.

If I’d sailed her blind, I probably wouldn’t have noticed by feel that this yacht’s mainsail lived in the mast during its time off. Odd how prejudice fades away in the light of truth. You know, “if you can’t be with the one you love, love the one you’re with,” as Stephen Stills sang. I’ll wager that only a GPS could tell the difference in speed between our sea-trial boat and one with the standard rig.

Upwind, the 625 relies on her 150 genoa for the majority of drive. This sail’s clean leading edge and adjustable draft allow it to draw well over many points of sail, though tacking and jibing it can be a pain. Our experienced crew and powered winches made short work of handling the big headsail, and the 625 tacked as though she were smaller, quickly passing through stays. Catching her on the new tack at exactly the right moment spurred her into a deliberate, but satisfyingly quick, acceleration — as befits her role as a cruising yacht. We jibed her without drama in the light-to-moderate winds of the day, because we didn’t need the running backstays. In high winds and rough seas, the crew would have to jibe the runners, as well as tend the headsail.

In keeping with current philosophy, Oyster has divided the cockpit into a lounge just abaft the companionway and, two steps up, a working end next aft. This arrangement lets nonsailors relax and enjoy their experience in safety, without getting in the way of the crew, and gives everyone aboard a place to hang out for sunset cocktails when the boat’s at anchor. The primary and secondary winches share a flat, each side forward of the helms and outboard of the guest’s cockpit. Crew members tend the genoa from the side decks, pushing buttons on the outboard side of the coaming.

Sight lines from the helms are excellent, in part because the working cockpit is high, relative to the low-profile deckhouse. A bench on both sides of the cockpit encourages the helmsman to sit, and the perch is quite comfortable. The wraparound seat back on each bench let me snuggle into the outboard corner of the seat and steer comfortably from the low side.

Her continuous mainsheet loops from a slot in the afterdeck, through a block on the end of the boom, back into the slot and then to port, where it emerges from a slot in the coaming then forward to a winch inboard of and slightly abaft the portside helmsman bench. The helmsman should be able to reach it from either side, though a dedicated trimmer will make tending the main easier.

Any cruising boat worth the moniker has to coddle her crew and guests in safety and comfort belowdecks, and the Oyster 625 is more than capable in this regard. Humphreys designed her as a live-aboard cruising yacht and, germane to that purpose, carried a large percentage of her maximum beam well aft. This allows a wide master stateroom and a lot of surface area under the waterline to help her surf down the face of waves. The master suite lives under the working cockpit and gets natural light from portlights in the coaming and in the topsides. In spite of our semitropical location, I immediately pictured myself and a significant other sharing this cozy area on a cold and dreary day somewhere in Labrador — maybe one of us stretched out on the settee and the other wrapped in a down duvet, sipping champagne and reading. Two translucent hatches in the overhead open onto the afterdeck. The only other way out of the master is via the linear galley on the port side. Opposite the galley and on the starboard side of the engine room is a stateroom with upper and lower berths. These are terrific sea berths, being close to the companionway and located very near the yacht’s center of buoyancy. Motion there will be as good as it gets in any kind of seaway. On the other hand, the shower stall in the master head intrudes on this little cabin. If I were planning to cruise the world aboard the 625, I’d ask Oyster to make a workshop in this space and provide easy access to the engine room. Then I’d use the settees in the salon for sea berths if I could rig easily stowed lee cloths.

Maple woodwork and white overheads add to the cheeriness of the 625’s interior. Three large vertical windows in the topsides port and starboard light up the salon and give the occupants a sloshy view of the yacht’s progress. I love to watch the water rush by on the leeward side of the hull.

In addition to the standard layout, Oyster offers one with crew’s quarters (instead of stowage) in the forepeak. The tight space has an upper and lower berth, a toilet and a sink. Less these quarters, the 625 has sleeping space for eight in four staterooms, which is wonderful for an extended family or the charter trade.

Oyster Marine has established its own extended family of owners. These yachtsmen regularly race one another, sail in rallies and gather for rendezvous. This strong family feeling helps keep owners loyal to the brand, and it attracts new ones. The 625 promises to perpetuate this tradition — more food for any sailor’s soul.

The Oyster 625 is a magnificent sailboat. Her sailing abilities are among the best for her size and offer a large step up when compared to the usual cruising boats owned and operated by couples. This, coupled with a voluminous and well designed interior makes the 625 one of the finest cruising yachts ever built by Oyster Marine.

The ability to sail at ten knots instead of seven or eight over an extended period of time allows owners to completely change their cruising plans. The Oyster 625 is a powerful sailboat that can be handled by an experienced couple but also has ample space for a captain and crew if that is the desired cruising mode. As well as being faster than her little sisters the 625 is also a much heavier allowing her to handle seaways that often keep standard cruising yachts on the dock.

The cockpit layout on the 625 is ideal for couples that enjoy sailing and entertaining. The twin helms are aft of the main cockpit and have all engine and sail controls within easy reach. The large cockpit features a beautiful table with a built in fridge. This space is a great place to have drinks dinner or lie down and take a nap. While underway it is also comfortable and out of the way of any needed controls.

Most of the oyster 625’s are able to accommodate crew forward while still having cabins available for family and guests. The 625 also has a storage area forward of the of the guest cabins in the forepeak. The galley is a passageway style galley that allows two people to work comfortably at the same time. The large salon separates the the galley and the master cabin aft from the forward cabins. The salon has large vertical hull windows and of course features Oysters G5 raised salon widows making the space pleasant in all conditions.

For the sake of this iconic British brand, the new Oyster 565 can’t just be good, it has to be exceptional. Nothing less will do. When the Oyster 825 Polina Star III lost her keel and sank off the coast of Spain in July 2015, the fortune it subsequently cost Oyster directly contributed to the company going into receivership.

Its backers, Dutch firm HTP Investments, ceased to provide financial support in February 2018 and the company went into administration. When gaming software entrepreneur Richard Hadida bought Oyster six weeks later , many wondered how he could rebuild the credibility of the brand and turn the business around.

So all eyes were on the Oyster 565 when it launched at the Southampton Boat Show in September. This is the first completely new design under Hadida’s watch and it sits at the core of the British firm’s market. This is the yard’s most popular size, replacing the 56 (75 sold) and 575 (45 sold).

Hadida has introduced some key developments to help it succeed. Oyster now moulds its hulls in-house rather than subcontracting this work, and he wanted third party oversight, so a Lloyd’s Register surveyor inspects all yachts in build once a week to approve the design, materials and build quality of the hulls and decks. This brings a level of assurance to new owners and should restore faith in the build quality.

The new owner introduced a diverse group of board members, including designer Rob Humphreys and sailor and former Formula 1 team boss Eddie Jordan as well as other business authorities. He also put the Oyster Rendezvous regattas and successful Oyster World Rally back on track. However, this groundwork counts for nothing if the Oyster 565 flops.

I travelled to Barcelona to spend two days testing Panthalassa , the first 565 to launch. Knowing there is a huge amount riding on this model, I wondered whether it would deliver. The answer is a resounding yes. The Oyster 565 is one of the finest production yachts I have ever sailed.

The design is contemporary and sympathetic to Oyster’s existing line-up, but with more volume, comfort, simplicity, speed and stowage space than its predecessors. The deck and interior layout is right up to date, the engineering behind the scenes is of high quality, and the finish is a step beyond what almost any other production yard can offer.

I found the Oyster 565 berthed alongside an Oyster 56 in Port Ginesta, which conveniently illustrated how hull shapes and deck layouts have changed in 20 years. The Oyster 565 has around 30cm more freeboard, the beam is carried much further aft, and it has a broader transom. The cockpit in particular is much larger, easier and safer to get into, and there are no sheets for guests to trip over.

The design strikes a balance between respecting the legacy of the 56 and the ten-year-old Oyster 575 , and introducing modern features such as a flush foredeck, clean lines and a greater hull volume. Some traditional cruisers may mourn the loss of a skeg-hung rudder and cutter-rigged headsails, but the ease with which you can handle this Oyster 565 in most conditions should convince the majority that modern design wins here.

A robust bowsprit extends the yacht’s length to 59ft. Although the hull length of the new Oyster 565 is shorter than the 575 it replaces, its waterline length is longer and it boasts 10% more volume. Its full bow sections also create space for a sail locker, a crucial asset for stowing the offwind sail needed to supplement the blade jib.

The Oyster 565 is clearly the product of a yard used to building high-end large yachts, as opposed to one pushing up in size into a level of engineering and quality with which it is less familiar. This is perhaps why Oyster describes it as a ‘pocket superyacht ’.

In this respect, the appointment of Paul Adamson as Oyster’s chief commercial officer was shrewd. Adamson is a seasoned Oyster skipper who took Eddie Jordan’s Oyster 885 Lush around the world (the yacht now belongs to Richard Hadida). He brings practical, hands-on expertise and big-boat knowledge to the yard.

The Oyster 565’s £1.5m price tag is steep, but it is comparable to similar-sized yachts from competitor brands and, unusually, comes with a very high standard spec. This includes hydraulic thrusters, furlers, and windlass, tri-radial sails, powered winches, a generator and a full electronic navigation package. You’ll even find 100m of 12mm chain in the anchor locker.

The Oyster 565 comes ready to go, with all the equipment the company knows will make for comfortable ocean cruising , gleaned from decades of experience and owner feedback.

It is immediately obvious as soon as you go on board that every detail has been thought through. The high guardrails have boarding gates built in. If berthed stern-to, a cassette-style passerelle (an extra option) extends at the push of a button, and its handrail rises automatically. Moving forward between the twin wheels, you enter a generous-sized, deep centre cockpit.

A bluewater yacht needs to have a kindly motion at sea, be easy it is to sail and remain comfortable when heeled. During our trials, the Oyster 565 was to prove genteel, safe and enjoyable to sail.

The 565 is simplicity itself to get on and off a berth. It comes with retractable bow and stern thrusters as standard, which allow you to spin the boat around its keel. The hydraulic thrusters are powerful enough to park sideways against a crosswind and easily correct any misalignment when approaching the dock.

Easier sailhandling

The hydraulic furling makes it equally simple to deploy sails even in a strong breeze or awkward seaway. I am not usually a fan of in-mast furling mainsails, but here the ability for one person to set and furl away the main without leaving the helm outweighs any negatives.

Oyster has also ensured that you can manually furl sails should the power or hydraulics fail. Both the mainsail and jib furlers have sockets that allow you to winch the sail by hand or, easier still, operate them with a cordless drill (a fully charged 18V drill will reportedly manage 15 mainsail furls).

The blade jib enables the Oyster 565 to point higher and tack or gybe faster and more easily than previous Oysters with cutter rigs, and without the risk of yankee or genoa sheets whipping around the cockpit. It also proved the ideal sail for our long beats upwind in 12-20 knot winds. The Oyster 565 is a powerful design with a medium displacement, able to maintain consistent speed with a soft motion through the waves that makes for a quiet and comfortable ship.

The twin rudders provide the helmsman with total control and forgiving handling. When the apparent breeze reached the high 20s and the leeward gunwale was immersed, we were on the verge of needing a reef, yet the helm remained light, with only a slight increase in weather helm. This means light work for an autopilot. You can really load the boat, so would need to keep an eye on true wind speeds and when to reduce sail.

The test yacht’s bright red asymmetric spinnaker helped us get the most from the Oyster 565 offwind. Again it was the consistent speeds that stood out: 9-9.5 knots in flat water with winds in the low teens, rising to double figures when going with the swell. Once the breeze was up to a Force 5 on our second day we were sailing consistently at 10 knots. I was hooked: this is an indulgent way to tick off mile after mile.

Most sail controls and sheets are within reach of the twin pedestals yet clear of the guest cockpit. When standing at the helm it is possible to straddle the coaming to release a sheet or reach the powered winch buttons during a tack.

Short-handed control

For owners who want to sail short-handed, however, it might be more practical to have the primaries closer to the helms, allowing them to hand steer the boat through a tack rather than relying on an autopilot. Leading the jib sheet to the aft (spinnaker) winch might make more sense, as it is closer to the helm and easier to reach without leaving the cockpit.

The mainsheet winch is directly abaft and in reach of the helmsman. It feels awkward turning round to trim the main, but I guess it is something you would get used to, or would settle for engaging the autopilot before trimming the main. There is currently no option for a traveller. Adamson believes that, for most owners, clear access to the cockpit is paramount, and a powerful vang was chosen to control the main instead.

Safe and secure on deck

The distance between the two wheels is perfect. Footwells help ensure that you feel in, rather than on top of, the boat while helming – that was not always the case on previous models. And wraparound backrests at the seats and handrails on the pedestals both create a feeling of security around the helm areas.

Moving forward along the wide side decks also feels safe thanks to high guardrails and handrails along the coachroof. Outboard shrouds and inboard jib tracks leave a comparatively clear side deck. The shrouds disappear neatly into composite chainplates below the toerail.

Going below feels less secure when the Oyster 565 is heeled, however. The flat companionway steps are steep, and curved sides would be more practical. The interior has plenty of handholds and solid fiddles, but there is so much headroom in the saloon I could only just reach the overhead handrail on the centreline.

It is easier to move forward along the starboard side of the saloon, though, and elsewhere the layout suits life at an angle. It is remarkably quiet below decks, a hush belied by the mesmerising sight of the sea foaming past the big leeward hull windows.

Behind the scenes

The British yard has stuck to a tried and tested interior layout for the Oyster 565 and has furnished and finished it impeccably. The standard of joiner work is as good as any you’ll find at production yacht level. The galley and aft cabin would be hard to better, and the utility cabin amidships, a workroom-cum-laundry with an optional pilot berth and access to the walk-in engine room, further compliments the proven layout.

Unusually at this size, Oyster offers the option of a master cabin forward with two double cabins aft. But unless you plan to spend long periods berthed stern-to, the standard owner suite aft with the magnificent views it provides will surely win every time.

Every part of the accommodation is used to its full potential, and stowage is maximised without any part feeling cramped. Practical touches include the cedar-lined, lit and ventilated wardrobes, clever use of indirect lighting, and deeply fiddled work surfaces that are shaped, moulded and laminated in-house.

However, it’s what lies behind the scenes that impressed me most. All services are easy to access for maintenance. The headlining is mounted on Velcro, while floorboards use the Fastmount panel system – although Oyster really needs to find a way to stop these sole panels creaking as it spoils an otherwise quiet interior.

Look below the saloon sole and you’ll find a proper, deep bilge sump in the keel stub. Bilges throughout the boat drain here through limber holes, which ensures any water stays in the lowest part and doesn’t slosh around. This is the most logical place for bilge pumps and by mounting them on removable plates Oyster has ensured they can easily be lifted to clean the strainers.

Installed beneath the companionway are two large bronze seawater inlets, one for the domestic side, such as fridge and air con, the other for the engine and generator. These systems are linked so that if one becomes blocked you can shut it down and use the other. It is also comforting to see the surrounding pipes all clearly labelled ‘Lloyds approved’.

The companionway steps lift for stowage and access to the top of the 11kW generator. Here you notice the thickness of the sound insulation. Adamson says Oyster has learned a lot about this through building its larger models. The engine room, for example, is surrounded by plywood with a high-density core and insulated with a composite of foam and sound-absorbing materials. When the engine is on tickover, it is almost impossible to hear it in the cockpit.

Besides walk-in access to starboard, panels below the galley sink can be removed for access to the port side of the engine room. The engine block sits on flexible mountings, below which is a sump that prevents any oil from running into the main bilge area. There is an electronic pump-out for an oil change, a powered fuel polisher and a water-in-fuel alarm – systems normally only found on larger yachts.

The longer you look, the more you appreciate the careful planning and the intricate detail that has gone into this yacht.

The Oyster 565 is a seriously impressive yacht. It’s a modern design, through and through: good-looking and spacious. It’s certainly expensive, but for good reason, as it includes an extremely high standard spec. And the engineering quality and level of finish really raises the bar. No yacht is perfect, but in terms of design and execution the Oyster 565 is as close as you’ll find on a series-built cruising yacht. This new model issues a very clear statement: Oyster is back.

Available in two keel formats, standard or with a shallow-draft centreboard keel, which is ideal for those wanting to explore shallow coves and cruising grounds. For ultimate bluewater adventures, the extended transom variant provides additional stowage and a truly vast lazarette.

The ergonomically designed cockpit features twin helm stations, alfresco dining for eight and a sprayhood on the deck saloon to keep guests protected from the weather, whatever the conditions. Equipped with the latest and most reliable sailing equipment, she is a pleasure to sail shorthanded. Her silky smooth, soft motion, even in a head sea, delivers consistently fast passage-making at only a modest angle of heel, making light work of ocean crossings.

Unlike other ocean cruisers for sale, push-button in-mast furling, electric mainsail and genoa winches come as standard and she offers responsive finger-tip control on the helm, thanks to the twin rudder design. The helm stations feature all the technology required for relaxed operation and navigation, with the winches within easy reach. There is a large sail locker on the foredeck to store your sails, spinnaker and Code Zero, and the long waterline, excellent stability and wide beam aft harness the significant sail power, no matter what sail wardrobe you choose.

The open longitudinal galley, navigation station and saloon are light, bright and airy thanks to the seascape and wrap-around saloon windows – forward units are opening, providing excellent natural ventilation at anchor. Every detail, practicality and seamanlike feature on this bluewater cruiser has been considered, from the optional convertible saloon table, which doubles as a day bed, the pop-up TV addition, galley fiddles for bracing when heeled, through to the extensive range of galley appliances. There is deep, comfortable seating for relaxing, with space for six at the saloon table, along with lots of stowage, essential for any bluewater adventure. Combine this with the handcrafted fit-out to a standard rarely found on a 60 foot sailboat, blended seamlessly with practicality and seaworthiness, the Oyster 595 makes living aboard for extended periods a truly pleasurable experience.

Hydraulic in-mast (IMF) and headsail furling

In-mast furling (IMF) for the mainsails and Seldén Furlex hydraulic headsail furling gear are fitted as standard. Hydraulic-powered, push-button controls are on hand for both systems on both helm pedestals, close to the primary winches, for complete control and ease of use.

Handbuilt oak & walnut interior

The standard joinery throughout is oak with a satin finish varnish. Cabin soles feature random plank, crown-cut walnut veneered boards, with rubber seals to minimise movement and squeaking.

Retractable hydraulic bow & stern thrusters

Interior layout configuration

The large volume of the Oyster 595 hull makes for a versatile space. There are two configurations to choose from – an aft master cabin and ensuite with two double ensuites forward and one bunk amidships; or two doubles forward sharing one head, with a workspace or bunk amidships. Wood options

Beautiful solid wood is a hallmark of Oyster 595 interiors. Choose from a range of wood options including walnut, maple and cherry.

Keel options

Oyster 595 centreboard variant – if you love cruising shallow coastal waters, you can upgrade from the standard lead-bulb fin keel to a shallow draft centreboard option with a minimum draft of 179cm/5’10”.

Bathing platform

Upgrade the standard open-stepped transom with an impressive hydraulic-operated bathing platform, providing easy access for swimming and hopping in and out of the tender.

Oysters & Bubbles Sailing Experience is the new 3-hour experience from AlgarExperience.  Departing from Vilamoura Marina, the tour takes place aboard our sailing catamaran that sails along the picturesque coast of the Algarve and its wonderful panoramic views. It is an engaging activity that combines the delicacy and exuberant flavor of oysters with the effervescence of sparkling wine.

As you sail along the picturesque coast of the Algarve, marvel at the panoramic views and the warm colors of the sky as the sun sets on the horizon. Feel the gentle breeze and the tranquil sway of the sailboat, providing a relaxing and romantic atmosphere.

The experienced crew will be at your disposal to ensure that your experience is perfect, offering attentive and personalized service. Enjoy special moments with your partner, friends, or family as you share this magical moment together.

This activity is usually carried out on the catamaran sailboat Vital , equipped with a bar, 2 WC’s and free WiFi.

Note: This activity is free for children up to 2 years old. Towels are available for rent at check-in upon security deposit. Due to safety reasons, disembarking in the caves is not allowed.

We can’t take credit for the creativity, ingenuity, or impeccable hosting abilities on this one – but we appreciate the heck out of our friends who can. For the third consecutive year, our foodie friends strung together what can only be described as mollusk madness. An elegant and slurpable ocean-themed feast we can’t help but raise our glasses to. They call it the Annual Bivalve Brunch – translation : bottomless bubbles and oysters galore.

The Oysters

Perhaps it will be your charming personality that results in so many positive responses to those online invites, but more than likely, it is the promise of oysters that will seal the deal. So go big, or they will go home. Be like our friends and display your beautiful bivalves in a way that commands attention. A multi-tier tower that could rival the height of most wedding cakes should do the trick.

Popular Oyster Varieties

These days thanks in part to some hard working independent oyster farmers and the collaboration with larger distribution companies, finding unique, small yield appellation oysters is easier than ever.

However, you probably won’t be finding any of those oysters at your local seafood counter, so keep an eye out for these popular, approachable and easily accessible varieties.

Blue Points , Long Island Sound

These plump, hard shelled oysters were the choice our friends selected to be served at their brunch. Blue Points were first devoured in New York City in the early 1800’s, where unfortunately they were basically eaten to extinction. These days, the name Blue Points is used to cover a much larger area, some of which can leave consumers feeling disappointed. Keep your eye out for ones that have been harvested from the sound of Norwalk, Connecticut to enjoy the best results.

Wellfleet , Cape Cod

Native to the area of the Massachusetts, Wellfleet oysters are synonymous with bright and briny. Their cold water environment slows down their metabolism which ultimately results in them providing a sweet taste. These long and strong-shelled oysters have been considered some of the world’s best for several generations.

Delaware Bay Oysters , Southern Delaware Bay

Depending on where your oysters are sourced from they may take on a different taste. The Delaware Bay oysters which are prized for their plump meat and delicate flavor are pulled from two locations, Cape Shore and the inner bay. Those from the Cape Shore are briny, sweet, and nutty, while their counterparts are much milder.

Malpeque , Prince Edward Island

Hailing from our neighbors to the north, Malpeque oysters are Prince Edward Island’s claim to fame. In 1900, these oysters which are clean in flavor and in presentation, were judged to be the tastiest oysters in the world at an exhibition in Paris.

Kumamoto , West Coast

These famously melon-scented oysters are sweet and firm. Their relatively small size makes them ideal for individuals delving into the oyster world for the first time, but are equally admired by seasoned slurpers.

If you’re interested in learning more about the oysters of North America, we recommend reading A Geography of Oysters by Rowan Jacobsen . According to the Los Angeles Times,

“There may be no more pleasurable food than a raw oyster, there almost certainly is no better guide.”

Helpful Hint : Whichever variety of oyster you decide to serve at your party, you’ll need to keep them on ice. Our hosts have found you can purchase the perfect type of ice from your local Sonic.

Shucking Tips

Perhaps in your attempt to float seamlessly about your party, topping off bubbles and engaging in witty banter, you’ll hire a professional shucker to take care of those nitty, gritty time consuming details. But what if s/he is a no show? Well, you’d better be prepared to wield your knife and crack open those shells on a moment’s notice.

Arm yourself with a few invaluable shucking tips and save the Band-Aids for another occasion.

Pack the perfect weapon! Select an oyster knife that you can be comfortable with. Professional shuckers will use a sharp, pointy knife that can quickly leave a beginner fumbling for those Band-Aids. Instead, as a beginner, try something that is slightly more forgiving.

Take it to the hinge! It is not the fastest way to shuck oysters, but everyone has to start somewhere. Going through the hinge will give you more control and less chance of knife slips and shell breakage.

No glove, no love! Use a good pair of protective gloves and keep your eye on the prize — even if there is wine sabering going on in the background vying for your attention.

Keep it clean! Use a towel under your oyster and even partially over the front. This will help protect your shucking surface, collect broken bits of shell, and soak up any juices you let escape. When it comes to shucking oysters, a clean space is a happy space.

Last but not least, don’t forget to separate the muscle from the shell. This is easily accomplished with just a simple twist of the knife.

And just like that, it’s time to enjoy your oysters with a glass of bubbles!

The Bubbles

The quickest way to glam up just about anything is to add bubbles. Distilled water – hydrating, but dull. Sparkling water, far more sophisticated. A hot bath – relaxing, but uninteresting. Throw in some bubbles and you’ve got a special occasion. The same goes for wine! So while you could open a few bottles of white wine to accompany your oysters, bubbles are certainly the more interesting choice.

Why Choose Bubbles?

Your first instinct might have you reaching for the chilled white wine to pair with your oysters. However, we recommend pairing bubbles with your oysters instead. The umami flavor found in oysters can make many white wines leave behind a metallic taste in your mouth. The saltiness of an oyster can turn many white wines flat, leaving them uninteresting and boring.

Whether it’s Champagne, Cava, or a domestic sparkler, the drier the bottle the better. If you opt for a Champagne, look for a blanc de blanc in either Brut, Brut Nature, or Extra Brut. Sparkling wines work so well because of their ability to complement the umami. The effervescence of the wine allows the saltiness and umami to River Dance on your tongue, leaving you in oyster bliss.

How to Display them

The important thing here is that your bubbles be kept icy cold. Warm bubbles are just an open invitation for disappointment. You could keep them chilled the traditional way for temperature control, but for optimum visual appearance and a slew of compliments on your creativity, think outside the bucket.

Our hosts have an antique stand alone tub that is the perfect resting place for bottles just waiting to be uncorked. If your tower of oysters hasn’t caught your guests attention, you can be certain that a bathtub full of bubbles will.

What else to Serve?

Classy hors d’oeuvres.

If you build an oyster tower, they will come. But they will come hungry and while oysters may be the main attraction, they aren’t all that filling on their own. The last thing you probably want is for your guests to get too tipsy on bubbles and pass out on your floor. So you should probably feed them something more substantial.

Our friends strategically placed platters of fancy-arse finger foods around for guests to nosh on. Bite-sized pastries filled with creamy dips along with pimiento cheese and crackers are sure to delight. If you want to be extra classy like our fab friends, serve it with a silver spoon.

Seasonal Side Dish

On the off chance that you’ve invited one or two non-seafood lovin’ pals to your bivalve-themed brunch, it’s a good idea to have at least one edible option that didn’t come from the sea.

Infuse your menu with seasonal items. If you’re hosting your party in the fall, like this one was, there’s no greater showstopper than a stuffed, baked pumpkin. Have you ever seen something so magnificent?

We walked through the doors just in time to lend a hand with the pepper grinder and cracking a few eggs to fill out the pumpkin’s interior. So while we played no role in the genius behind the recipe that was far more complex than any Shake ‘n Bake chicken, we can still chime in with a partially disputed “and I helped.”

The recipe used at our Bivalve Brunch came from a book of unspecified origins, but if we were going to attempt recreating this masterpiece we’d follow a recipe such as this one .

Helpful hint : Make sure your pumpkin fits into your oven before you go through the painstaking trouble of filling it.

Seafood Stew

Since this was the bivalve brunch, it came as no surprise that the food table was flourishing with more than just the oysters. Our hosts had a drool worthy spread that could please even the pickiest seafood connoisseur. One of the standout dishes was a seafood stew .

It was a warming, filling dish with mollusks prominently featured. This would be a welcome addition to any table, especially during the cooler months when the rich broth will do wonders to warm your guests from the inside.

Sweet Treat

No party is complete without a sweet sendoff. The slicing of the cake usually signifies the conclusion of the event, but in the case of our friends, it just means it’s time to pull out the candlesticks. At any rate, we recommend plating up a regional delight as the centerpiece of your dessert table.

In Maryland, the logical choice is the Smith Island Cake. One of these days we’ll actually make a visit to the famed island bakery , but until then, they deliver straight to your door. Our hosts pre-ordered the coconut and lemon cakes. After sampling both, we can attest to how well they complement the seafood flavors of the menu. If you’re hooked on chocolate, we hear those are equally delectable.

Final Thoughts

Popular pairings are often popular for a reason – because they’re just undeniably so dang good; Oysters and bubbles are no exception. We’ve sampled this fancy faire around the world. From La Boqueria in Barcelona to the downtown pubs of Dublin (where Guinness is arguably the better companion).

In a time where we can’t travel and oyster bars are all but out of the question, bring the party to you and integrate a little oysters and bubbles into your life.

It is an extremely popular bar in extremely popular place! If you want to get a table - no matter which day - it is obligatory to do it few days before you go. In summer this place is very busy, but they have good... and different types of oysters all year around. The secret of this cafe made like there are in Europe - in Nice and Monte-Carlo - the secret is that may be its owner is Dasha Zhukova (a girlfriend of russian billionaire Roman Abramovich and the owner of Contemporary Arts Museum). This place is perfect for the beginning of a long night with going to clubs and discos, like russian people call - "preparty" place. More

The place as much as beatiful is expensive. A bottle of wine from 100$, an oyster 5-12$. However, there are a lot of people and nice atmosphere.
