YACHT CHEF JOBS

What is a galley without its chef? A vital and rewarding role onboard any yacht, a yacht chef keeps all its crew, guests and owners well-fed and happy. Similar to any head chef in a restaurant, a yacht chef has to be even more creative with their talents, as they must perform their tasks on board of a moving vessel – with occasionally limited, or hard to come-by supplies. Part entertainer, full-time cook, a yacht chef will have to be aware of all dietary needs, allergies and food requirements of those on board while being able to work hard under pressure. Most yacht chefs will have likely started their career in a restaurant or hotel before making the switch to the yachting industry.

If you have excellent cooking, cleaning and management skills, together with a charismatic and solid personality, then why not apply for a position as a yacht chef? DUTIES AND RESPONSIBILITIES

A yacht chef’s responsibilities include preparing and cooking three meals a day. Yacht chefs must also manage their food budget and deal with the galley accounts, overseeing the safe food storage and stock control. As most guests aboard any yacht are accustomed to dining at the finest restaurants around the world, a skilled yacht chef must be flexible, very skilled and be able to prepare a broad repertoire of foods from around the world. Maintaining high levels of food and personal hygiene are also key aspects of a yacht chef’s role.

YACHT CHEF SALARIES

acht chef salaries tend to vary, depending on the level of experience as well as the size and type of yacht they are working on. Head chefs’ salaries can range from €3,500 to €10,000 a month, depending on the size of the vessel. Sous chefs average pay scale varies from €3,000 to €6,000 per month. Yachts between 81m and 100m offer the highest average monthly pay for both roles.

We're seeking an experienced Captain and Stew / Cook / Deck couple to join this 30m Private / Light Charter MY in October 2024.

An ideal Captain candidate would have a Yachtmaster Offshore / Ocean (as a minimum), but ideally an MCA Master 200gt or anything larger. A strong level of previous Captain experience on yachts of a similar size is required with previous charter experience (ideally).

Previous engineering experience and engineering certificates (AEC 1 minimum) would also be very beneficial.

An ideal Stew / Cook / Deck candidate would have experience with both interior and galley duties for both private / charter itineraries. 

We are looking for a professional team with proven experience and longevity working together on yachts of a similar size/itinerary.

This vessel will provide a dual-season itinerary with Med summers and Caribbean winters so previous experience as a Captain in both Med and Caribbean waters would be very beneficial.

A Yacht Chef is a position integral to ensuring that guests have an amazing yachting experience by creating unique and unforgettable meal experiences. 

Gastronomy and the art of fine dining has become as integral a part of the superyacht experience as the water itself. Superyachts offer the ultimate luxury escape, and that must be reflected in the exquisite food served to guests throughout their time onboard. A Yacht Chef is the mastermind behind creating unique and unforgettable meals. 

A yacht Chef is predominantly in charge of guest and crew meals and managing all aspects of running the galley. Superyacht guests are accustomed to eating at the best restaurants and unsurprisingly because of this, expectations can be very high. Superyacht Chefs are therefore expected to provide a wide range of cuisine, adapt to different dietary requirements, deliver high-quality food prepared upon request and keep the crew well fed.

The galley will run with different chefs depending on the size of the yacht:

• Head Chef — The Head of the galley and as such the chef responsible for all the food that is served. On some yachts this is a Sole Chef role, whilst on others the role will involve managing other Chefs.

• Sous Chef — This role works closely with the Head Chef, assisting them and potentially covering for them in their absence. Every yacht is different, so on some yachts the Sous Chef is also in charge of preparing crew food, while other yachts may have both a Sous Chef and a Crew Chef.

• Crew Chef — This role is primarily focused on cooking for the crew of the yacht. A Crew Chef is a role usually found on larger superyachts where the number of crew is greater, so a separate Chef will be employed to make sure the crew’s needs are met.

• Galley Hand — A Galley Hand is normally found on yachts over 100m in length. Depending on the type, size and itinerary of the yacht, the duties of this role can include meal prep, galley cleaning and assisting with crew food.

• Cook/Stew — This position is more common on smaller yachts and is often split between cooking and Stew duties, or assisting with Stew duties, depending on the size of the yacht. Some vessels hire a Cook/Stew in the winter to cook for the crew and help with interior duties.

What does a yacht Chef do? | Yacht Chef Job Description

The main priority for a yacht Chef is to make sure that everyone on board has an unforgettable meal. A yacht Chef has access to the best quality ingredients available, so it is up to them to use their creativity to produce the most awe-inspiring dining experience. 

A Chef onboard some of the most advanced yachts in the world has the opportunity of experimenting with some of the finest quality ingredients in the world, and often not easily acquirable on land jobs. They may be asked to spontaneously pull out ‘all the stops’ and let their imagination run wild. Or, they might be requested to provide innovative and exciting meals for guests with strict dietary restrictions. 

As a yacht Chef, adaptability is key. Some guests may want simple home cooking; if they ask for a burger, it's up to the Chef to make it the best, tastiest burger that they have ever eaten! If the guests want spaghetti carbonara, they need to make it taste like an Italian grandmother’s spaghetti carbonara! 

While Chefs still have a certain budget to stick to, one difference between working on a yacht and in a restaurant is that they don’t have to worry about trying to make a profit. All they need to do is keep the owners, guests and crew happy. 

As well as creating stand-out meals, Chefs are in charge of budget management,  provisioning, and ensuring that the galley adheres to strict standards of hygiene and cleanliness. It is their responsibility that everything runs smoothly in the galley. A Chef works closely and liaises often with the Chief Stew , to ensure that guests receive a seamless streamlined service from the galley to the table.

The responsibilities of a yacht Chef include:

Meal preparation for both guests and crew

Daily menu planning 

Liaising with the Chief Stew or Head of Service to deliver seamless service

Food provisioning and inventory checks

Organisation of the galley and maintaining cleanliness and hygiene 

Supervision of a team of Chefs (depending on the size of the yacht)

Budgeting and accounting

Soft and hard skills required to be a yacht Chef

Yacht Chefs should show real passion and enthusiasm for what they do: many successful yacht Chefs do stages and additional training during their time off. The ideal candidate demonstrates a diverse repertoire, flexible and adaptable qualities, and the ability to work well under pressure.

A genuine passion for cooking

Diverse knowledge of produce and the ability to provision all over the world

Menu planning knowledge

Ability to skilfully multitask

Ability to handle criticism

Mandatory certificates needed to work on board a yacht 

All crew members regardless of position and seniority need to have a valid STCW Basic Safety Training certificate, along with a recognised Seafarers medical certificate, the most popular being the ENG1 which is issued by an MCA (Maritime and Coastguard Agency) professional medic.

About the Chef

The chef aboard a yacht is a professionally trained culinary expert that is in charge of all guest and crew meals, provisioning and complete management of the galley. Effective organization of the galley involves a wide range of skills including but not limited to meal planning, provisioning, food safety and hygiene as well as administration and inventory. This position requires strong communication skills, extensive food/nutrition knowledge and creative plate presentation. Typically, the successful candidate will have at least two years working aboard a yacht of similar size in addition to shore side experience.

We are looking for a Deckhand/Security for a 100m+ M/Y This position will suit an ex Royal Marine, Army or Paratrooper, ideally someone who is looking to take a step into the yachting industry or has a seasons experience already and ready to use the skill set and knowledge from the Military. Chief Engineer 50m+ Private/Charter Motor Yacht

We are looking for a Chief Engineer to join a 55m world cruising, private and charter motor yacht. The yacht is travelling to the US and therefore a B1/B2 visa is preferred. Ideally, the successful candidate will be an accomplished Engineer, comfortable working with IDEA and managing a Second Engineer. The opportunity offers the chance to work on a world cruising, private and charter yacht with a good team and established yacht owners. Operations Officer Shoreside

Wilsonhalligan are looking for an Operations Officer to join an established company based in Europe. The ideal candidate will: -Forward mooring requests to authorities and input vessel data in AYPRO, gathering as much information as possible about the vessel and visit purpose. - Inform the captain about harbour access and stay guidelines, including required documents before and after arrival. - Assist clients pre-arrival by collecting specific requests and offering services to organise their stay. - Be present at the yachts arrival berth, ensuring no obstacles during berthing. - Welcome clients on board, gather necessary documentation for authorities, collect ID documents for border control, provide information on requested services, and manage additional requests. - Quote all services during the stay and pre-arrival to get the captains approval and avoid disputes. - Organise provisioning during the yachts harbour stay. - Monitor and promptly address any service issues or changes. - Collect all service information and costs in the vessel folder and/or AYPRO to assist the administration office with invoicing. - Share information with colleagues to plan services according to Company standards. - Make purchases if needed, following the Administration Departments guidelines and obtaining invoices/receipts. - Handle all information confidentially and in compliance with GDPR. - Support and help train new staff in collaboration with HR and under the Office Managers supervision. - Follow Company procedures and policies. - Be available outside working hours for any contingencies. 34-year-old's summer side hustle is working as a private chef on yachts—she earned over $15,000 last year

Kesi Irvin 's summer side hustle has taken her across the world. 

The New Jersey native is paid to sample gelato in Italy, jet ski in the Mediterranean and walk through open-air markets in Croatia. 

Between June and August, Irvin, 34, works as a private chef on yachts sailing in Europe. This summer, she's been hired on five charters, each spanning one week. 

"It's been such a fun way to see the world," says Irvin, a full-time travel blogger and digital nomad.

Irvin is on track to earn more than $10,000 once the season ends — last year, she made about $15,000, according to financial documents reviewed by CNBC Make It .

Quitting a career on Wall Street to be a digital nomad

Irvin planned to spend her career on Wall Street — not traveling the world. 

After graduating from the University of Pennsylvania in 2012, she moved to New York to work as a financial analyst. 

But "there was not much work-life balance at all" working on Wall Street. "I started to really crave the life aspect," Irvin says.

In 2015, she quit her job intending to take a one-year career break to travel the world. 

That one year turned into two, then three, and now Irvin continues to live and work in different countries, taking breaks in between her travels to stay with her parents in Bluffton, South Carolina. 

She started working on yachts in 2015 to fund her adventures abroad. 

Her travel blog, "Kesi To and Fro," has 17,000 followers on Instagram and now serves as Irvin's main source of income — but for the first few years she traveled, Irvin relied on her savings and earnings from her culinary side hustle. 

Landing a yacht job with no experience

Irvin applied for her first seasonal job at Yacht Week, a company that hosts week-long sailing trips in the Mediterranean and Caribbean Seas, in 2015, a few months after being a guest on one of their charters. 

"I had zero professional cooking experience, but I said in my application that I was a great home chef and a quick learner," she says.

As luck would have it, Yacht Week had a crew member pull out of a charter one week before departure — and called Irvin to fill in. 

She worked as a charter host, planning and cooking meals, cleaning the kitchen and entertaining the 10 guests aboard. On most charters, Irvin says she's working in a two-person crew: It's her and a skipper, who captains and operates the boat.

That first job quickly led to other opportunities: Irvin says guests recommended her to their yacht-owning friends, and the other crew members at Yacht Week introduced her to Facebook groups and online job boards for seasonal boat jobs.

'It's nothing like 'Below Deck'

Irvin continues to work as a yacht chef with Yacht Week, The BucketLust and other private yacht charter companies during the summer months. 

She follows the same routine for most charters, waking up at 7 a.m. and working from 8 a.m. until 4 p.m. every day. 

Preparing meals for a large group in a tight boat kitchen requires a lot of "creativity, patience, and thinking on your feet," says Irvin. 

For some trips, they're docking in a new city every day, so she can find a local bakery, grocery store or farmer's market and buy fresh fruit, meat and fish. But on other charters, she has to purchase all the ingredients and supplies she needs for the week on the first morning. 

In those instances, Irvin says she will freeze meats to give them a longer shelf life and use more non-perishable foods like pasta and rice as boats have limited fridge and pantry space.

Some of the most popular meals she's made for guests, she says, include tuna poke bowls and brunch spreads of pancakes, eggs and bacon paired with a bloody mary bar.

In the afternoons and evenings, Irvin says she will explore whatever city they're docked in, whether it's by renting a moped or grabbing coffee at a local café.

Irvin is often asked if her job is similar to that of the crew on "Below Deck," a Bravo reality series that chronicles the lives of the crew members who work on a superyacht. 

"It's nothing like 'Below Deck,'" she says. "We're not working 24-7 or siloed from the guests, it's more relaxed, we're encouraged to fraternize with them and make sure they have a positive experience."

The finances of being a digital nomad

Irvin says working on yachts has been a "nice complement" to her full-time job.

As a travel blogger, Irvin has multiple streams of income including group trips she organizes and hosts; paid travel writing; affiliate marketing, brand collaborations and ad revenue from her website. Those different income streams can earn Irvin anywhere from $20,000 to $40,000 a year, according to financial documents reviewed by CNBC Make It.

But earning a decent, reliable income as a content creator can be a slog, she adds. "It's nice to have a consistent, secure job to fall back on," Irvin says of her culinary side hustle. "And I have zero expenses when I'm working on the yacht, so I'm saving money while I'm earning."

If you want to get paid while traveling the world and are half-decent in the kitchen, the gig "couldn't be an easier sell," says Irvin. "You get to live on a boat, catch a nice tan, make friends from different countries … it might be tiring, but it's not a hard job once you get the hang of it."

Billionaire Laurene Powell Jobs ’ super-yacht, the Venus , was in a minor crash with another mega-vessel, the Lady Moura, owned by Mexican billionaire Ricardo Salinas Pliego , we hear.

The accident between the big ol’ boats — both reportedly worth upwards of $120 million each — happened on July 22nd in Italy.

A source familiar with the situation told Page Six that both yachts were actually anchored when the incident occurred.

Said our seaworthy source: “The Venus came into contact with the Lady Moura — which was also anchored,” adding that on Jobs’ boat, “No family was on board, only crew.”

The insider said the accident happened when, “The wind changed very suddenly, picking up from a breeze to 55 knots over the course of a few minutes.”

Boat

The source said, “Neither boat ‘dragged anchor,’” but alleged that the Lady Moura was, “on a chain double the length [to be] expected in the depth of water they were in… Both captains were in discussion immediately following the incident about minor repairs needed.”

According to the site Boat International, Pliego’s side recorded the incident, and there’s video of the nautical fender-bender on Instagram.

The outlet reported that the billionaire could be heard saying in Spanish, “I would like to know what the captain and crew were doing that they didn’t see a yacht the size of mine in front of me. Good thing nothing but a scratch happened, but it’s a big scratch that’s going to [cost] a lot to fix.”

Boat

The 256-foot Venus was custom created for Steve Jobs, and designed by Philippe Starck. But the late Apple founder never got a chance to use the boat before his 2011 death and it went to his widow.

At 344 feet, the Lady Moura was previously owned by a Saudi businessman and cost $200 million before it was reportedly bought for $125 million by Pliego, the third richest person in Mexico.
